Eat Healthy & Actually Enjoy it!
I know you know that eating is such an important part of our overall well-being and plays such a huge part of our everyday life, face it we need to eat.  With that said, what we choose to eat is so important.  Considering our lifestyles today where we are juggling our day jobs, parenting, relationships, exercise, self-care, our households and the list goes on; what we eat must fit into our real lives.  It must taste good, be quick to prepare and healthy.  Here is a collection of some of my favorite recipes and chefs that fit that criteria that you can try. 

Here are some of my notes on the first video collection: 
  • I love (and so will you) her prepping concept!  I love to prep to make the most of my time but eating the same thing over and over again gets old --> her method is refreshing, healthy but also provides different meal options using the same ingredients. Also, since everything is pre-prepped you are so much more likely to eat it (and therefore eat healthy) and have more valuable time to spend on the things that matter most to you!
  • I love the sweet potato toasts and there are so many variations that you can use - hint, search up sweet potato toast recipes in Pinterest for other great topping ideas. 
Jaimie Oliver is always a classic and his recipes are ones that I always come back to again and again.  He is is light a refreshing which nice after a long day and is always trying to develop recipes that are simple to get people cooking.  

A couple of comments on the recipe: 
  • I have made this, it was super easy and delicious!
  • I put a simple salad on the side to round it out.
  •  May not have needed the salad as the dish in itself was filling but also healthy. 
I am also in love with the Pick up Limes content.  Even though I am not vegan I find myself returning to her recipes and they are delicious, they must be considering the massive following she has created.  
  • I have to admit I have not tried these recipes yet but it is on my list as they look so good and simple.
  • The easy ramen noodle recipe seems perfect for a fast lunch to prep and bring to work and you only need to add hot water. Perfect for the weekday grind.
